Beans and Greens Frittata
This delicious frittata turns greens and beans into a complete one-skillet supper.

Ingredients:

2 tablespoons olive oil

1 yellow onion, finely chopped

1 clove garlic, minced

1/4 teaspoon red pepper flakes

6 cups Swiss chard, washed and chopped

2 teaspoons kosher salt, divided

2 teaspoons red wine vinegar

1 (15-ounce) can Full Circle Market Organic Three Bean Blend, drained and rinsed

8 large eggs
-
1/2 cup half-and-half
-
1/2 cup grated Parmesan cheese
Method:
- Preheat oven to 375°F. Heat oil in a 10-inch oven-proof skillet over medium heat. Add onion, garlic and red pepper flakes, and sauté until onion softens, about 5 minutes. Add Swiss chard and salt and cook, stirring frequently, until wilted, about 8 minutes. Add vinegar and beans and stir to combine.
- In a large bowl, whisk eggs, half-and-half and cheese until combined. Pour mixture into skillet and let cook for 5 minutes, or until the edges just begin to set.
- Transfer skillet to the oven and bake for 20-25 minutes, or until the frittata is puffed and light golden and it is set in the center.
- Cool at least 10 minutes before slicing and serving.
